Iron

There are two forms of dietary iron: HEME iron (derived mainly from haemoglobin and myoglobin in meat, poultry and fish) and NON-HEME (from plants and dairy products).

Iron from animal source foods is bound to proteins and is well absorbed, while in plant source foods it is found in inorganic acid salts and is absorbed much less efficiently.

In order for iron to be absorbed by the body, it must be reduced to a divalent form from its original trivalent form. Unlike heme iron, non-heme iron absorption is inhibited by polyphenols (in grains, herbs and legumes), tannins (in tea and coffee), calcium and plant proteins (in soybeans and hazelnuts). Absorption is facilitated by vitamin C (present in fruits and vegetables) and organic acid.

The amount of iron in a healthy human body varies from 2.5 g (40 mg/kg in adult females) to 4.0 g (50 mg/kg in adult males). About 60% of iron is found in the haemoglobin of red blood cells, 7-9% in myoglobin, and 2% in various important enzymes.

Haemoglobin, the blood pigment that carries oxygen in the blood, and myoglobin are proteins that specialize in transporting and preserving oxygen. About 25% of iron in the body is found mainly in the liver, spleen and bone marrow.

Iron contributes to the normal formation of red blood cells and haemoglobin andto the reduction of tiredness and fatigue. Iron has a role in the process of cell division.

Iron contributes to normal cognitive function, immune system functioningas well as normal energy-yielding metabolism.
