Bromelain, known as “ananase”, belongs to a group of sulphur-containing proteolytic enzymes. It is found in pineapple (Ananas comosus), mainly in the stem. Its bioactivity is measured and expressed in GDU (gelatin digesting units).
Papain is a proteolytic enzyme derived from the fruits and leaves of tropical papaya (Carica papaya). Its bioactivity is measured and expressed in TU (tyrosine units).
Cellulase is an enzyme that breaks down cellulose into monosaccharide (glucose) and disaccharide (cellobiose), and its activity is measured and expressed in CU units (cellulase units).
Although the human digestive tract does not produce cellulase, its consumption is especially recommended to vegetarians as it promotes the digestion of soluble and insoluble fibres that abound in vegetarian dishes.
